Great book: SLAUGHTERHOUSE...Gail.A. Eisnitz....and yes I eat meat, poultry, veggies,fruit.....everything! I am just careful from where and/or whom I buy it..

Anybody really interested in good food will watch where they shop! and do not believe a word by the USDA...they lie, they cover up, they LIE BIG TIME! edited because I can't spell english anymore..or french for that matter!

upthread somebody recommended Thuries Gastronomie magazine....Strong endorsement, great photos, great chefs (in France), great recipies with how to and progressive photos, and if you are in to making sweets (I'm not), they have many recipies too. There number (33) 5 63 56 16 06...1 year (10 issues large) 122.00 Euros for other countries outside Europe.

dinner for friends usually does not hit the table for an hour after I have planned. Even when I prep everthing and have it ready to go. ←

I do not know if it is available in french, although the author is french/moved to US/back to france i believe.....anyhow when i moved to france i took THE MAKING OF A COOK...MADELEINE KAMMAN with me in my suitcase. it is a bible for the home cook and professional cook alike. her other books mentioned in this thread are great too.
