    I sliced a baguette that was baked this morning and made Moe a Beef Dip sandwich for breakfast using half a baguette and leftover roast beef and au jus for dipping and I'm going to take the same sandwich to work today for lunch.

    The Sterling Silver top sirloin roast is my favourite roast. When cooked rare /medium rare it is always tender and has a wonderful flavour. I had intended to roast one for dinner last night, but Matt had made pizza and Moe had some of that for lunch and didn't think he could do justice to a big dinner. So.....I roasted it this morning and we had a roast beef dinner with mashed potatoes, peas and corn. I had thought I would take some for lunch, but instead ate breakfast with Moe this morning. This roast is always good, but this one in particular was even more so.

    I had intended to bake my favourite coconut cream pie, but used the last of the eggs yesterday. Didn't want to wait until after I got back from the grocery store today so decided to use the Hoosier Sugar Cream Pie recipe and just turn it in to a coconut cream pie by adding toasted coconut to the filling and on top of the whipped cream. It was suppose to be dessert tonight but Moe decided he would have a piece for his lunch.

    Baguettes baked this morning. Slice one while still a little warm. Toasted for Moe's breakfast to go with bacon and easy over eggs. The bacon is Kirkland's brand reduced sodium. Even if we hadn't had to reduce Moe's sodium intake, I would still buy this bacon. It is that good.
  7. Started this dough last Thursday and put it in the fridge until 8:00 PM last night. Left out on the counter until 3:00 AM this morning. Baked four larger size baguettes.

    I still had a chicken breast left from our Friday night's roast chicken dinner. So I made Moe a hot chicken sandwich for dinner last night. I had cut potatoes for fries and let them soak in cold water and only ended up frying half. The other half I left soaking and then used this morning, cutting them into 1/3rds and frying to go into Spanish Tortillas. Added to beaten eggs along with fried onions. Rather than fry like an omelette, I baked them in small cast iron skillets for individual Tortillas. Moe had one for breakfast along with toasted baguette and I'm going to take one for lunch.

    Prepared and baked bread dressing before leaving for work yesterday. I had the chicken seasoned and ready to go into the oven and Moe got it into the oven before I got home. Just had to cook the potatoes and steam the rutabaga and green beans and make the gravy. And warm up the dressing while the chicken rested.

    Wow, that looks delicious. Makes my mouth water. I hope you are continuing to improve Liuzhou. I made cabbage rolls yesterday and we had them for dinner. No sides, Moe just wanted cabbage rolls. And he had them again for breakfast. I'm going to take some for lunch. This is my favourite cabbage roll recipe. Similar to one that I use to order in a Hungarian restaurant in Toronto. Their version had a light brothy tomato sauce which I liked better than cabbage rolls with a thick tomato sauce.

    I had planned to make Chicken Cacciatore for dinner last night. But Moe said that he wasn't really all that hungry which worked for me because I wasn't hungry and I was tired, so I made it for breakfast this morning. I love this version of chicken cacciatore which @JoNorvelleWalker shared. Made without tomatoes, peppers, etc... More of a "white" version.

    @JoNorvelleWalker, they are easy to do. You just pick up the pasta with long tongs and twirl the pasta around the both sides of the tongs and then position the tongs over the plate and let the curled pasta slip off in a a neat "nest". You can also turn the plate as you lower the pasta which helps keep the shape.

    Didn't make the wings for dinner last night so made them for Moe's breakfast this morning. Served with a little TBQ on the side and a Wedge Salad with tomatoes from our garden.

    I really want to cook a whole bone in ham. Slices won't satisfy the craving for a baked ham with all the sides. I might try your soaking tip though with smoked pork chops.

    Thanks @rotuts, I have been very tempted to buy a bone in ham and soak it in an effort to reduce the salt. I've had a craving for a bone in ham since our Thanksgiving.

    I tried a new recipe last tonight that a friend shared on her FB page. Spicy Lemon Pasta Nests which I served with grilled boneless chicken breasts. Moe really enjoyed this pasta dish.

    Made Moe a toasted BLT for breakfast this morning. On homemade bread, with one of the last tomatoes from our garden, and, keeping with a lower sodium diet, I found sodium reduced bacon at Costco that is surprising really good. Regular bacon has 400mg of sodium in 2 strips and the reduced is only 180mg in 2 strips.

    I had a small roasting chicken that I had intended to roast Tuesday for a roast chicken dinner with all the sides. We ate lunch late and neither of us was hungry for a big dinner. I went ahead and roasted the chicken anyway and Moe ate the two small legs and we saved the breast meat for hot chicken sandwiches which we had for dinner last night. Baked a loaf of homestyle white bread for the sandwiches.
  24. Most of our meals are made by me, and I don't use a lot of commercial products. We did like to go out for Dim Sum and other Asian foods when we went into Victoria, but haven't done that since we started watching the sodium. I think that most people would be very surprised at how much salt they use and how little it takes to reach what is recommended. Daily recommendation for even those without an issue is 2300mg of sodium. Averaging/rounding it out, 5g or 1 teaspoon of salt is equal to about 2000mg sodium. 1 gram is just under 400g. I purchased a small scale from one of the local Cannabis shops that measures in mgs up to 100grams. This is what 1g of salt, approximately 400 mg of sodium looks like. And 5g of salt, approximately 2000mg of sodium , which is basically the daily recommendation. That bowl is tiny. Small lime for comparison. Same as a teaspoon. It hasn't been as difficult as I thought it was going to be to reduce the sodium in our meals without having to give up eating meals that we enjoy. For the most part, salt substitutes have not worked for me. I did find a few salt free seasonings from Hot Mamas that I use to season when I grill or roast. They also make a low sodium line of mustards. I bought two of them and Moe really likes one with dill , which also tastes like horseradish with a little heat, and when mixed into a small amount of mayonnaise made a very nice topping on a roast beef sandwich. But the recommendation to use lemon, and other seasonings and herbs in place of salt doesn't work for me because I don't want everything to taste like the salt substitute if that wasn't the original flavour I was going for in the first place. I think we have been doing really good at greatly reducing the sodium in our diet and Moe doesn't seem to be missing it at all. We were at Costco yesterday and I bought their 50% less sodium bacon. Regular bacon had 400mg in two slices and the reduced sodium bacon was 180mg in 2 slices. So he had butter basted fried eggs and four slices of the bacon for breakfast this morning and the bacon was surprising good. Just pepper on his eggs and I've reduced the salt by half of what I use to put into a batch of bread dough. All the swelling he had in his ankles and feet has disappeared. It actually disappeared within a few days of reducing the sodium.
