FYI.........I heard through the grape vine that this is a future site of yet another Sushi Lounge.

I would just like to say that Zod is not only a great talent, He is also a great guy. He truly is a chefs chef.

There will be a full bar with 12 different beers on tap. There will definetely be no signs of Venue cuisine at this place. This will be a comfortable casual place with great food, and plenty of it. It should be a good addition to the area. I dont want to hash out too much info right now because alot of things are still under discussion. But I will update you as things are finalized with the menu etc.

I am working as a consultant on this new steakhouse chain that is set to open in November/December. It is going to be a moderately priced New York City theme steakhouse with HUGE portions, and brick oven pizza as well. Think same price point as Charlie Browns, but much higher level of food quality. The techniques are very similar. We reduce the liquid to concentrate the flavor of the product before we add the alginate. As doc said, the result is an amazing texture and concentration of flavor that bursts on to the palate.

I have to say, as great of a town as Hoboken is, alot of my patrons dont like the parking situation there. If its raining, snowing, or even really cold, the restaurant gets a good amount of cancellations. Also, alot of people claim that Hoboken is too much of a "college town." I guess in some cases this is true. Ill tell you something else, if I had a dollar for every time someone told me I should be in Montclair, Id already be retired.

I expect gilt to remain extremely busy being that the place is still new. We will see where the place is in 6 months from now after all the hype is gone. The menu is extremely creative and I dont think price is an issue ( especially with the great location) as long as Liebrandt doesnt listen to all the bullshit going around and maintains his focus, I think the place is going to be just fine.

What street is it on?

Im putting circa on the top of my list.. Michael is a cool guy and Im sure this place will even be better than The Jefferson.
