  1. I have visited Tokyo before, in 2000, but it was very brief. This time we'll be in the Osaka-Kyoto area for about 5 days. I would love to hear what anyone can recommend while we're there. Budget is of no concern (I always go all-out on vacations), love to try just about everything (but in context; i.e., I want to eat on Japanese food when I'm there, not hamburgers or french food!). I understand that Osaka/Kyoto is famous for the okonomiyaki and tofu. Address and names would be greatly appreciated!

They actually offer their own line of clothing, and not Chef Revival. I called and asked. Also, I think it's a bit misleading when they call themselves "Chef Wear", when there's another major company called that same name!
  3. Does anyone know a local shop that carries the Chef Revival line of uniforms? I can't seem to find any, besides the original website, which only does mail order. I'm looking for short sleeve jackets. Thanks in advance!
  4. Last week I ran a crab special at the restaurant. I had started out with 15 orders of crab, and it was completely sold out within 20 minutes. I was so shocked. It was a very simple preparation: Roasted Dungeness Crab with Salsa Verde. Culls are also pretty cheap, if you don't mind missing a leg or a claw. Yummy.
  5. Hi everyone, This is my first post here. Actually, I've been following this forum since I moved here last year. I have opened up a small business here, called cafelucia, which was written up by the Georgia Strait newspaper a while ago. So, anyway, as the title implies, where can I find a commercial source for these Spanish White Anchovies? I've tried several specialty vendors in the area such as Tosi's, but they just look at me funny. For those people who don't know what these anchovies are: They're pretty big, with filets the size of your middle finger. They're usually packed in white wine vinegar (or plain vinegar), herbs, and sometimes with a little olive oil. They're not very salty, nor briney. I am having a very hard time finding them. Coincidentally, several of my vendors have mentioned that there is an anchovy "shortage", globally. Any help would be appreciated! Thank you!
