I, personally prefer Wustof. But the last four knives I've purchased are Global. I work with a knife in hand about 4-6 hoursa day. I sharpen my own knives with a Japanese wet stone @31-36 degree angle. sounds like a crazy degree, ballpark! As long as it cuts, I don't care! aloha,

new to e-gullet, live in Kaimuki, work in Honolulu. Have to say that the awards are really kind of sad. I work for RUI, worked @ ryan's, worked @ palomino currently saute @ kincaids. I think the nightlife @ ryan's is pretty cool, the kitchen with full menu to Midnight? Kinda sucks to be a cook... But, the eye-candy! Brah...Friday night 11-12. Worth the price of a beer to watch the hotties. That said, chef mavro's didn't make the list? Have eaten there twice, food was delicious! Alan Wongs is mean too. I agree that if you don't advertise, you're probably not going to place.. aloha,

Aloha! First post for me in the Hawaii section. Pretty cool so far, I'm new to Gullet and I find most of it hilarious! I'm Haole (smile when you say it ) I've worked on Oahu & Maui. My Hanai family lives in Makawao. I've been in Hawaii since 1993. Grew up in Seattle. Any way I've noticed that the club scene in Honolulu has blown up! Nothing like a mainland city...but, still. Pipeline. Dave & Busters... Ahh, the gods weep. There is an excellent restaurant, family rest, Ichiman Ramen on Kapahulu. Really cool people, decent food, nothing fancy but, it's honest! I'd rather eat some food by someone who is trying than by someone who is "telling". Anyway, I dig all the small spots I'd rather not share my favorites for fear of retribution...By the way, I worked @ Angelo's about 5 years or so ago. They do make good, honest food. Clean kitchen, fun to work. Good job that I left to work for a Master chef in Restaurant Row...What, exactlly is wasted on the youth? Intelligence? Ahh, I'm out. Aloha and lots of good thoughts....A

All mushrooms. I have to make them taste good every day for people, but they still taste gross to me. Sorry to all who love the fungus grown in s@#%. Mushrooms are icky.

I've got birks and they're comfortable enough, get me thru 12 hours...But,put oil or anything on the floor and I'm on my ass. I'm 5'10 and the danskos make me feel too tall. Nike Air needs to make shoe for us.
