How about Outlaw Cook by John Thorne? And some Elizabeth David seems essential, given how much she helped the English transition from their WWII boiled-beef-and-canned-cabbages rationing miasma to more Continentally influenced cuisine. An Omelette and a Glass of Wine is a good place to start.
