    It's unfortunate when restaurants forget that they are not just in the food business, they are in the hospitality business. They should provide not only a good meal, but also a good experience, which is what most people remember long after they have forgotten the taste of the food.
  4. I have eaten at Lameloise twice. It is everything it could and should be. Perfect service -- attentive but not too, professional but not aloof. Food is exceptional. If you order the standard 3-course menu, you end up with about 7 courses. They just keep bringing little things. I can't remember for certain, but we had either 4 or 5 dessert courses alone! Lameloise is one of the great restaurants and great bargains in France. For 85 euros you will get a meal that would cost twice that elsewhere and three times that or more in Paris. Jacques Lameloise's motto says it all about this place: "There are no words strong enough when it comes to honoring our guests." I have also stayed at the Hotel Montrachet in Puligny-Montrachet a couple of times. Very nice, seems to attract a lot of English and Dutch driving expensive cars. Ask for a room overlooking the street. #7 is a nice corner room.
  5. I don't think these temperatures can be correct. 71C = 160 F, way beyond medium rare and certainly not what I ever get in France for "a point." 63C is 145 F, in other words medium rare. Saignant in France is very rare indeed, in my experience.

  9. I think you should sacrifice an hour's sleep or cabaret time and have dinner at 8:30. The only people in a Parisian restaurant at 7:30 will be Americans. Since you can easily get to Republique on the Metro from anywhere, I have a suggestion for a nice place with a wonderful look and feel: Le Petit Zinc, in the 6th. Its facade is so quintessentially Parisian that it is on many art posters. You'll probably recognize it. Mark

    Bonjour Bleu, I recently found your blog, which was wonderful. Since the blog is finished I am contacting you here with a couple of questions. When we order steak in France "a point" it is quite rare. Fine for us but not always for our companions. What is the next step up? Don't want well done. We have been to Lyon a couple of times, but have not eaten at Splendid. We are bringing a few couples this summer and have reserved there. Do you have an opinion about the restaurant?
