  1. I just found a 1960's version of "Le Cordon Bleu's Cooking School" encyclopedia set at a yard sale for 10 bucks...is some fun stuff... One thing I thought was cool is that there are very few men in the photographs of the books, they are all women... Cheffy

Although I have been hanging out on the net for a while, the blog thing is kinda new to me, thanks for sharing...while checking links that were attached to RestaurantEdge I found one I thought was cool and inspiring, just little stories written by different people in blog style... Mad Chefs Quite a few of them made me reflect on who I am and what I do...I love moments like that... Cheffy
  3. I have a list of like 30 different cheesecakes that I do... I have done a Mango-Guava-White Chocolate that was out of this world...reduced Mango Nectar and Guava Paste with orange juice and zest...it was the bomb... Cheffy
  4. I do major volume of cheesecakes and I wrap and re-wrap them for freezing and I have not ever had a problem with them and like was mentioned I cut while still partially frozen for plating and they rock... Cheffy
