I don't have a direct answer to your question - by "whole unroasted cacao nib" do you mean unroasted cacao beans? I guess you have already come across scharffenberger nibs and that isn't what you wanted? I also have a question - has anybody tried the nibs from http://www.stoneandgiacomotto.com/ they also seem to be based in northern california, but are more expensive than scharffenberger. Maybe local neighborhood cacao roasters will exist in the future the way coffee roasters do today.
