  1. After you boil your eggs and drain the water, just put one or two eggs back into the pan, cover and rotate the pan in quick circles for a bit. The shell usually peels off in one or two big pieces.

  3. My favorite book when I was that age was called "Watch Out for Chicken Feet in your Soup" by Tomie dePaola. My mom and I always read it and then made bread dolls (simple bread braided around eggs with faces drawn on them) from the recipe in the back. I think I still have a photocopy of that page tucked away in one of my cookbooks..

    Burger helper

    Just a note for the veg. option...back in college when I wasn't eating red-meat I'd often order a Whopper w/no meat patty- no need for a portabella burger when I was just in the mood for a quick meal. I visited the West Coast and had the In-n-Out grilled cheese animal style and raved about it to all my friends back home. There's a great and v. successful buger grill here..they have kept it very simple as a veg. there I would order their grilled cheese with tomato, even though they had a veggie burger option. If a restaurant didn't have a special veggie patty I'd prefer a bun with just good fixings as opposed to a frozen burger that I could easily make myself at home. Have to have the good fries though!
  5. Hi Wendy, I understand your frustration! I enjoy writing but when it comes to anything artistic, like plating or decorating I can never ever get it to come out the way I imagine and it really puts a damper on the whole experience! I think the thing to do is just to take a step back and realize that as long as it tastes good it all turns out in the end. Some suggestions for your copy would be to use more action words and adjectives, to try to get people interested instead of worrying about getting every ingredient in- make sure to highlight what makes them unique but let the servers descibe them in detail if needed. For example: Cookie Basket choose your favorites from a variety of cookies (chewy oatmeal, classic chocolate chip..) baked fresh daily. Frozen Vanilla Bean Soufflé Enjoy an ice-cold vanilla parfait resting on a swirl of chocolate and caramel, complimented by a wafer-thin almond tuile. It is definitely harder than it looks! Good luck.
  6. The best trick I've seen for this comes from some silly cooking show on tv. Just put the eggs back in the pan you boiled them in after they've been drained, put the top on and swirl them around and around a few times until the shell can be peeled off in one piece.
  7. Glad you're enjoying St. Croix. For some great Crucian takeout you should try Singh's, located right at the entrance to town near Time's Square. It's not the greatest atmosphere but the food makes up for it. I love to pick up doubles when they have them fresh, roti, rice and beans, yucca, potato stuffing (my favorite) or johnny cake and take it somewhere outside for lunch.
