    Cumin. We discussed it at the Pie Party last night - cumin makes everything from burgers to cheese to stew to indian food better. Where do you love cumin most?
  4. it messes you up. three shots mixed with coke (that's the way it it drank, with coke and only coke) and i was a cripple for three days. i have heard that there is everything from embalming fluid to mercury in this stuff, and while i don't believe it, there is something. it doesn't get you good and hammered, it gets you good and hungover.
  5. We know this, but still, having Lenny around, even if he doesn't work there, makes it a bit better. Plus most of the greek pizza places will never make the list of great pizza in NYC, the great ones are still, for the most part, Italian.
  6. You don't think the taste of the pizzas and bagels have changed? I kind of do. And regarding the tank truck, I didn't say that the water is the only thing. There were two other factors, the Heat and the Yeast. All three must be in harmony.
  7. Ughh Mekong? Are you talking about that foul stuff from Thailand, I doubt that it's legal outside of Thailand as it has somany additives to it. Mekong gives the absolute worst hangovers of any beverage I've ever had. Calling it whiskey is kind of criminal. Sorry, I wouldn't know where to find it, but I've a Thai friend that I will ask.
  8. Well, to my knowledge, most of the water in the tristate area is "soft" where as most of the US has "hard" water.
  9. Forks and knives for NYC pizza?!?! (we are the people in the next booth over and yes we are laughing at you hillbillies). Anyway - in college in upstate NY, where the pizza is gawd-awful, a friend of mine from Merrick came up with his three things to look for to know that you had a good chance of getting a decent slice in an unfamilar shop - they are: A. There is a picture of the Virgin Mary (or maybe Jesus or St Francis) hanging somewhere with in 5 feet of the oven. B. There should be someone with one of the following names somewhere in the shop at all times (doesn't matter if they are the pizza maker, the counterman, deleivery guy, or the loud ever present customer that can nurse a coke for hours while bitchin' about the Mets - they just gotta be there) Vito, Vinny, Tony, Mikey, or Leo. C. There is enough oil on the slice that when excuting the pizza fold (New Yorkers know what this is, it's why we don't need utensils), a big dollop of oil will drop on your shoes. Now my honest opinion, NY Pizza has a lot to do w/ both the yeast AND the water AND the oven heat.
  10. Just a real quick note. Thanks to everyone who made me feel so very welcome as a total newbie. The wine was Bedell Cellars Cabernet Sauvignon (1998) and some Ommegang Beer. Next time I'll bring a rhubarb pie! It was a pleasure to meet so many nice people who enjoy good food as much as I do. Suzanne and Howe, you are wonderful hosts - I love Suzanne's fridge list, esp when you pulled out the curry leaves. BTW - at the risk of showing favortism, the best thing on the table was the Balsamic/Strawberry Soebert (sp). I want the recipe! See you at Burger Club or Chinese New Years or.....possibly the Pizza Club!

    My Kaluba Burgers are always dripping and reddish pink in the center. Psssssst regarding the Kimchee on the burger...it's good, huh? Try adding cumin to homemade burgers yum.

    A little vanilla extract. Real butter and real maple syrup make all the difference on top. No need for fanciness.
