    Dinner 2024

@Ann_T:Your halibut always makes me envious and salivate! I see it's on the Sobeys flyer starting tomorrow: $5.99/ 100 grams. Just wondering what the price is for you, as it is from your coast. I will be biting the bullet tomorrow for some! Steamed Chicken, Shitaki Mushrooms and Chinese sausage: Had the granddaughters up for the day. Seems I always have to have a "buffet" when the two are here: one will like something, and the other one will not... I cooked back ribs in the oven, took a rack and sides to my brother and s-i-l, then we had the other for supper. The 11 year old granddaughter wanted perogies, ate 10 and tried and liked 1 rib and some beans. The 9 year old - no ribs, but would eat shrimp (6 jumbos) and Cavendish waffle fries. Hubby and I ate what was left;-) They seem like bottomless pits as they ate cinnamon buns, grazed on a small charcuterie board, more raw veg like carrots, cukes, broccoli, grapes, and Easter chocolates before supper!

@Shelby: Sorry to hear you'll have to go thru' this second surgery. Hopefully, it will be successful, and you'll be very prepared mentally and food-wise. When my grandson had his jaw broken by a thief swinging a heavy bag of electronics at his head while working as a security guard at a Walmart, we put a lot of food thru' the blender for him, even turkey supper as it was Thanksgiving! What he enjoyed most was congee. I made a lot with homemade meat stock, meat diced fine, etc. Maybe you can do that for a couple of meals. For us these last couple of days: Beef Tenderloin Stroganoff and Pappardelle Breaded pickerel fillets, rice, broccoli, and chopped salad

    Lunch 2024

Went out to a favourite local diner for lunch with a friend: Komfort Kitchen. Breakfast and lunch is their specialty. Eggs Benedict is the Sat special, and I had my first today! It was very good! Might have to go again 😉

    Dinner 2024

Catch up with the meals: MaPo Tofu & Eggplant Pork Chop in Mushroom Sauce Spatchcock Chicken: Chicken was seared, then brushed with a mixture of soy sauce, mustard, honey, tomato paste, sweet paprika, fresh ginger, salt. Laid the chicken breast side up on a layer of sliced oranges. The whole thing was wrapped in foil and roasted at 350F for 50 minutes. Remove foil and roast for another 20 minutes. The juices, mixture all mingled with the orange slices = delicious! 2 meals to celebrate the Irish! Corned Beef & Cabbage, and Guinness Beef Stew. I found out the alcohol doesn't burn off in 2 hours with a lid on the casserole. I slept very well that night! Still had 2 whole dressed pickerel in the freezer. Deep fried one and served with Sweet & Sour sauce and bell peppers. Last night, it was deep fried tofu stuffed with ground pork, shrimp, shitaki mushrooms mix. Braised with oyster sauce and Romaine lettuce. Felt like A & W tonight: Teen Burger Lettuce wrap, fries, and onion rings, no picture, but I did make dessert: Cherry Galette with cherries I froze from last summer.

    Dinner 2024

@Shelby: I always look forward to your meals! WE had been to Winnipeg for our grandson's enrollment into the RCAF. Went for dim sum lunch after, and we were so full day after when we came home that I didn't want to cook. So, quick wonton soup with ramen for early supper: Picked up a large chunk of beef liver, price reduced from $7.00 to $5.00 at Safeway. Guess no one else wanted to do the slicing himself. I loved it, cut it thick! Breaded and pan fried. Finished in the oven. Onion, peas and mashed taters = perfect meal! Picked up Chinese Mustard Greens in the city. Enjoyed soup with pork neck bones a couple of hours before supper. Have not seen this Cottage Roll for ages. Ss Flashfood app showed this for $4.79, so I grabbed a couple for the freezer. I remember cooking these early in our marriage when we had one lowly income as hubby taught on permit. The roll was simmered with a bay leaf, celery, onion and carrot for a couple of hours. Then I glazed it with brown sugar/whole grain Dijon mustard, OJ, nutmeg and roasted in the oven for 20 minutes. It was fall apart, tender, and not as fatty as I anticipated. Fried up leftover mashed taters and peas. Blanched Chinese cabbage and asparagus in the simmering liquid. We enjoyed the cottage roll supper!

    Lunch 2024

Had leftover rice, so made a favourite from hubby's family's recipes. His Mom never liked rice as a veg, only in rice pudding. dad and hubby loved rice in any form. Mixed rice in with a couple of eggs, chili flakes and made an omelet. Cheddar cheese sauce ladled over and sprinkled with chili flakes.

Picked up back ribs and tried a Char Siu recipe that is very similar to the one I use. This one used honey in place of sugar. Th ribs were marinated overnight, and they were roasted in foil at 300 for 2 hours. Once uncovered, I basted the ribs a couple of times and raised the temp. to 400. The ribs were good, and one rack went to grandson! Had one of the granddaughters spending the afternoon with us while Dad was working. She loves beef - roast or steak, medium rare. I slow roasted a single rib prime, had some Cavendish waffle fries (air fryer) and steamed asparagus, carrots, and some raw vegs for the grand. She had the pieces that were more rare than the big pieces.

A quick supper of hubby's family favourite before attending a garden club meting. February and I am already itching to go play in the dirt! LOL! KD moat with creamed salmon and corn: Our little Chinese grocery store stocks Greenland Halibut. I had picked one up and thawed it for supper tonight. It smelled fishy, so I washed it well, and pulled the skin off. Steamed for 10 minutes, then slathered it with sizzle oil over ginger, and a sauce with ginger, green onion, and cilantro. I love it when I can buy cilantro with roots! Stir-fried a half bag of vegetables that came with teriyaki sauce, and half a bag of bean sprouts that needed using up. The fish was lovely!

    Dinner 2024

Meals had been catered to the grands. Sunday, first supper alone: Odds and Ends from the fridge and freezer from meals before grands: Bit of beef Fajita, Shake'n Bake BBQ chicken breast, a couple of shrimp over noodles and Gailan. Wanted Beef and Sechuan spicy turnip, but was out, so used Mui Choy (fermented cabbage), spicy radish and mint. We have a grocery here called Brandon Food Rescue that sells excess food donated from various stores, Hutterite colonies, etc The food is sold at reduced prices that help low income folks. But, they also have a couple of vendors, local farms for beef, lamb, pork, poultry. I saw lamb advertised and wanted to try their product. Prices were similar to our grocery stores. I picked up a package of lamb ribs - 2 racks $20.00. They were wrapped in butcher paper so I couldn't see what they were like. I slow roasted the ribs last night with Turkish spices. They did not have a lot of meat, but what there was, nice flavour and tender after 3 hours in foil. Had a couple of stove-top grilled lamb chops to make an actual meat meal for hubby!

The one and only time I've ever had canned tamales was on our honeymoon, 58 years ago, in Banff. Guess w didn't care for them as we've never had them since! LOL! That goose and blueberry bread look amazing!

A quick supper after a busy day with appointments: Shake'n'Bake Chicken Cavendish fries and peas Had strip loin steaks thawed, but didn't feel like steak. Sliced and stir-fried with fajita seasonings, veg. Eaten with flour tortillas, fixings and guac. Leftover beef was used for next day's supper, steamed with Mui Choy, chili flakes, and mint leaves Had the grands here for the weekend while parents are away to Calif for a "conference". 25 year old grandson was helping out by sleeping over with them at their house. HE eats copious amounts of anything. The girls are picky, but they both love ham and scalloped potatoes, and uncooked vegetables! Banana Cream Pie from scratch as per request, MY Mom's recipe.

    Dinner 2024

We got our latest Covid vaccine last Friday. Based on my past reactions, I figured I wouldn't feel like cooking supper. Brought some packets of joong from the freezer, and that's what was for supper. Good thing as I was very tired and developing flu-like symptoms (body aches) But I also had a slab of pork belly marinating overnight in the fridge. Thought I'd better cook it up. This was my first attempt, and I don't think I will repeat it again. LOL! Much easier to buy when I am in the city! The flavour was good, but the skin did not blister as anticipated. The slab was pretty fatty. I packed up most of it for my grandson. who loves it! Didn't do much forCNY, but I did manage Tong Yuen, the savoury kind. I had more dumplings than hubby, who is not a fan. I gave him 3, and some udon noodles. I think I eat this just for the daikon! Tried a recipe from Jamie Oliver's new book "Veg": Reverse Puff Pastry Pizza. He had posted a video on facebook. I tried it last night and we enjoyed it. Would have liked more puff pastry as the sheets I had on hand were smallish. I pan fried a striploin steak to go with it as hubby is such a carnivor. We enjoyed supper watching the Super Bowl!
  20. Looks great! Thanks for sharing.

    Dinner 2024

@Smithy Come on up! I'd feed you without your enlisting;-) Tried a recipe someone shared in my facebook group. It was called Chicken Alfredo Lasagna, except you rolled the filling in lasagna sheets instead of layers. The ready-to-use noodles I bought were not pliable, so I just layered it like the usual lasagna. Not a fan; I will continue to make regular tomato sauce ground beef lasagna, and Chicken Alfredo with Fettuccine. Pork and Shrimp stuffed bell peppers in black bean garlic sauce.

No. Use a plate to help flip the "pancake", then cover and cook another 10 minutes. I checked about half way to see how brown it was.

    Breakfast 2024

Something new to try for breakfast: mashed banana mixed with 3 tbsp quick oats and 2 eggs. This batter is poured over a non-stick pan lined with slices of banana. This is cooked for 10 min on med high heat, covered, flipped than another 10 min.It was quite good. Eaten with maple syrup.

I have such an issue when I do edits. LOL! Thought I'd breakup the photos / meals a bit: Congee with the Fixings ( and a couple pieces of char siu ribs from the freezer), and Durian Crepes for dessert Grandson has enlisted in the Canadian Armed Forces. He leaves March 1 to some training camp, so I am feeding him all his favourites until then - Lamb chops and Prime rib! Our Superstore has fresh clams in. Pulled out other odds and ends for seafood, and we had seafood in coconut milk, lemongrass, and kefir leaves for supper. Had 2 pieces of pickerel fillet left from the seafood the night before: Eaten with roasted cauliflower and sweet tater fries Temperature was up to +4 C yesterday! I had a fresh chicken, rubbed it with a mix of harissa, honey, lemon juice, olive oil, and garlic early in the day. Into the Big Easy for 90 minutes. Tonight: A & W burgers! 😉
