  1. I am so sorry to be visiting the eGForums for this reason, but felt compelled to express my shock and sadness in finding out about losing Steven, and more importantly my sympathy to his family and friends, loved ones, all those he touched. Rest in Peace.
  2. Thank you both. That's the one, in Wine Spectator, but since I let my WineSpectator.com subscription go, I don't have access to that content. I just don't have fifty dollars to spare right now, so I was hoping the recipe could be found somewhere else.
  3. Can anybody give me or direct me to a recipe for the pork belly/Rillons at Bar Boulud, or something like it? I know it is in Wine Spectator, an issue from about a year or so ago, but I discontinued my Wine Spectator subscription, so I can't go for it online. Thanks!
  4. Overbowling is the way to go, and I have tendencies to overplate as well. I think it looks much more attractive than overfooding (or to be kewl, call it overphooding).

  6. This is a great thread, what beautiful food. Getting notification of this post reminded me that I hadn't shared my first pork belly cooking experience, which was successful. Thanks to this topic and to mixducky's recipe on RecipeGullet... It was braised. I used Ellen's recipe as a guide. Now that I know how yummy it is, next time I'm going to try roasting and strive for the crispy, crusty version, and hope it's as successful as this method was. I was out of star anise, so that wasn't used, and I used palm sugar instead of Chinese yellow rock candy for the sweetener. I threw some garlic into the making of the sauce, and used just one soy sauce (Thai) instead of dark and light. The pork belly was between one and two pounds, so I halved the recipe. I think that's it for my modifications. What deliciousness! One of the best things I've ever eaten. Thank you, Ellen.
  7. It's even cold here. I cannot imagine how bad it is for you all. I baked cookies the night before last and took them to work yesterday! I use these rare opportunities to simmer pots of stuff on the stove or slow roast something in the oven. I'm getting ready to make some pasta e fagioli now.
  8. I wish I could help you. Your questions are great. I'm within an hour from Cocoa and if I knew there was a good wine bar and a place for good stone crab in the Cocoa Beach area, I would be there Saturday myself. Actually on Saturday I am heading even further south, to the Melbourne area. There are some decent wine bars popping up around, but not in, Daytona. For good stone crab, I buy it locally and fix it myself at home. I'll be watching for replies to your inquiry, but I'm afraid it's not good news.

  11. I've been in Delaware for the Thanksgiving holiday, so of course... fresh draft Dogfish Head. I chose the 60 Minute IPA and Midas Touch. Even though his beers have made it to taps in Florida, I enjoy it more when I'm here.
  12. Klary, I'm so glad I found this thread. You are one amazing woman and writer and photographer and on & on I could go.... It brought back wonderful memories of my road trip with Morten and his then-girlfriend a few years ago, when I saw many of the same places. It's on my Bucket List to go back to Moab and Bryce Canyon. I don't know when that will be, but this is a nice reminder to hold me over until that day comes. It was nice of you to mention visiting Moab in memory of Bill, aka Flocko. When he died, we were making plans to meet in person. I think of him a lot. Thank you so much for sharing this with us. I look forward to reading more.
  13. Nice! And two years, to the day. The most delicious thing I ate within the last 24 hours was fresh stone crab claws last night for dinner, an annual tradition. It was opening day. October 15th is the first legal day of the season. I'm sure sometime back in the day I posted a photograph. They were tasty, icey-cold, dipped in traditional mustard sauce.
  14. That's a good deal. I wish I had an extra hundred right now to get one. It's been too hot here for herbs to grow well outside. In follow up to what I mentioned upthread, my son's fiancee is very happy with hers. I saw it when I visited her in the spring, and it looked great.

    Thanks sooooo much for that recipe for the scallops with miso and mustard sauce. It is a must-do for me in the very near future. Last night I was in the mood for steak, which was on sale at Publix, but not in the mood to grill. So, I cooked it by my current favorite indoor method, first stove-top in the skillet and then a very few minutes in a 450 oven. It was really, really good. That's some also-on-sale cheap "black whitefish caviar" (?!) on the baked potato with sour cream and butter oozing out on the plate, and yes some butter melting on the steak, too.

    Lisa2k, that looks delicious. If anybody can make chicken breasts look good to me, that says something! Great looking baked ziti, too, and congrats on the cheese. Kim, it looks like your fish & chips were cooked to perfection. They certainly look beautiful. I had not heard of that method for fries. I'm interested in hearing more about that and what else you do with the fryer. I've had one of those on my wish list for a while. Please keep us posted. Chufi, your food looks gorgeous as usual. Cleo, the shrimp were first "rubbed" with a spice mixture, mostly cumin and smoked paprika, and after grilling on the plank drizzled with lime juice and sprinkled with cilantro. Next time I cedar-plank shrimp, I'll used less salt. It was a little too salty. (When I cedar-planked salmon, there wasn't enough salt.) BTW Stash, it's nice seeing you here recently! Megan, plum with pork IS a good idea, I'll try that. Hello and great job to anybody I didn't mention specifically. As usual Suzi, it's good to read your tales... except the part about the snake. Here, not breasts but thighs last night. I grilled them after brining with the recipe for olive-brine in the July Food & Wine. Good one! I didn't brine it overnight, as called for in the recipe and glad I didn't... It would have turned out too salty. What's up with the too-much-salt thing when grilling lately, I wonder.

    What a roll everyone is on! I've been on a good streak myself... One of the best looking was cedar-planked shrimp on the Weber this weekend. Last night, equally good was pork and cabbage, and more corn, but except for the corn it wasn't pretty.

    Great looking food, everyone... Too numerous to applaud each one individually. My dinner photos turned out decent last night and tonight, so here goes. Last night was a one dish meal with grouper that I made up as I went along. I marinated the fish for a little while in lime zest and juice, cilantro, jallies, garlic, ginger, etc.; pan-seared that; served it on top of a clam broth with tomato, spinach, corn, etc.; also with pasta; and garnished with the clams and some scallions: Tonight I grilled pork and mango kebobs, sort of following the recipe from a Weber cookbook:

    Bridgestone, that's an awesome-looking hard core grilled steak dinner. I've been on a beef craving and would love to have a dinner like that to help get me over it for at least a few days! The next porterhouse I grill will have butter applied on the grill like in your beautiful picture. One night this past week during my recent craving I had only a little piece of steak in the house, so I made do with that on the grill and tried some homemade chimichurri with it. I had heard that's a good use of chimichurri and indeed it was. Still, now I need to go porterhouse shopping.

    So nice to see you, too! I long to be in Paso Robles. Maybe my Navy son will be stationed in Lemoore again some day and I'll get back there. Chufi, I am so ready for a ham dinner like that, with the eggs just like you get them. Doctortim, your food photos are gorgeous. Tonight I had left-over steak sliced on a salad of lettuce, tomato, onion, and blue cheese. Last night's dinner included this mussels recipe which was awesome. I used smoked paprika and steeped the saffron in heated sherry and otherwise followed the recipe. Easy and good!

    Sherry, and cherry preserves... mmm, sounds great for duck. Good to see all of you and your beautiful meals, too. Yeah, they are dried beans that I put in a square vase which was from a floral arrangement. Fun. I'll probably be away from the computer soon. I'm working long hours for the next few days, and then going to Colorado for the wedding of our son from Denmark and the woman he met in Greenland. Small world, and I wonder what kind of food this union will produce!

    I ended up getting a Canon Powershot A590. So far I like it OK, but I haven't even read the book and learned anything about it except for to point and shoot. I sold my digital SLR camera and all the accessories. I like just throwing this little thing into my purse, instead of carrying around a bigger camera and equipment. I thought the Buffalo duck wings were one of the best things I've ever tasted. I buy whole ducks at the supermarket and sometimes cut them into pieces, so I've been saving the wings and accumulated a collection. I used the recipe that I do for chicken wings: salt and pepper them and deep fry, and then add them to melted butter, Sriracha, and white wine vinegar. I can't wait to have more! Tonight I fired up my Weber, after cleaning it out and replacing the charcoal grate and cooking grate, and cooked a NY strip steak. It was perfect. I am on a roll.

    New camera! New idea, Buffalo duck wings! With the Buffalo duck wings I had homemade french fries, black beans with onion, mango, & cilantro, and Cabernet.
