  1. I don't have one at home, but I used one for years and I've been waiting for something like this to come along for a long time.

     

    First thing I noticed was that Ninja got smart and made their containers slightly smaller than a pint deli cup which was a bummer. That was the economic alternative for Paco containers. 

     

    Hoping to start playing around this weekend. I have a Lello 4080 that is great but cumbersome and if the Creami could replace it that would be pretty impressive. Very interested in what the overrun is going to be like.

  2. Heading to Chicago with my 13 year old daughter for a few days in November. She's a 'beginning' foodie. Loves GOOD steak, Kobe/Wagyu, Asian, Italian, and Pizza but not into offal or anything funky... She can definitely appreciate good food though. I was a high end pastry chef for many years so she also has a good eye for pastries/desserts.

    We will be visiting the aquarium and staying somewhere nearby. Any help would be great as I haven't been to Chicago in years...

  3. Just a quick question. When using the Mol d'Art melters do you leave the lid on or off for an overnight melt? I suppose I'm worried about condensation with the lid on but would prefer to have it on as I don't like the idea of leaving all the choc uncovered all night.

  4. I guess I'm reviving an old thread but I was just wondering how people were holding their reverse spheres? I want to add them to a dish on my menu but I can't figure out the best way to hold them. Fully drained and dried or floating in liquid. Anyone have any experience holding through a typical service?

  5. Does anyone use a thermometer to determine when churning ice cream is ready?

    I'm trying to find a way to ensure consistency regardless of who churns the bases. I have one book which has recommended temps which seem pretty good, don't know them off the top of my head, but I can't find any other mention of this method anywhere online and was just curious if anyone else uses temp as an indicator.

  6. Does anyone have any recommendations for storing tapioca after it has been cooked. I'm talking about just the pearls by themselves, unflavored. I used to make a coconut tapioca soup so for that I could just leave the tapioca in the soup for a couple of days in the fridge and it held fine. Now I'm making them to use unflavored and then flavoring will be poured over them tableside. I've tried storing them in simple syrup and they just get hard within a few hours. Any suggestions?

    I'm looking for a souffle recipe, psatry cream based, just a simple vanilla bean souffle that I can prepare in advance and refrigerate/freeze until needed for service. I know I've seen many recipes for this but I'm currently in the middle of a move and all my cookbooks are in storage and can't seem to find what I'm looking for on the web. Anyone have anything that fits the bill? They don't need to hold for too long, just long enough so that I can prepare them before service and hold them for 4-5 hours. Any help would be greatly appreciated.

  8. The family and I are heading down to southern California for a week at Disneyland and some time in San Diego. I'm hoping to get some good recommendations for family friendly places to eat. Nothing chainy, perhaps some Italian, wood fired pizza, Chinese, Japanese, bakeries, dessert places etc.. The kids are well behaved in restaurants and we like good food so I suppose family friendly more in the way of not too expensive or fancy schmancy. I'm a pastry chef so good desserts are always appreciated...

    Any help would be great as we have no clue about the food scene down there.

  9. Just wondering if anyone has ever tried using arrowroot instead of cornstarch in pastry cream? I'm hoping that it will be more freezer friendly but have heard that using arrowroot in dairy based applications can make the finished product slimy. I'm going to give it a try but just thought I'd see if anyone here had tried it before.

  10. For those that use refractometers, do the ones you use compensate for the high temperature? All that I've come across say that you are supposed to take the reading with a room temperature sample which obviously isn't possible with PDF.

    Also for those that mold their PDF, how do you do so? When I make mine and pour them onto the silpat they set almost immediately to the point where I can't even level them out without 'breaking' the top skin and getting lumps.

    Any help would be great.

  11. Bring the lemon and the sugar to a boil with agar powder before adding the yolks. Once its chilled, process in vitamix like a fluid gel, then chill again. It should be fine. I always substitute part of the butter for white chocolate in my curds, and it seems to keep them from running on the plate too.

    Any idea what ratio of agar to use?

  12. This will be served cold. I love the PH curd, but it is too loose. As soon as you start working it it runs... I was tempted to try adding some Mycryo to it to get it to set up without the rubberiness of gelatin. Anyway, I tried Gale Gand's recipe today and I'll see how that is holding up tomorrow, it uses cornstarch and a bit of flour.Thanks

  13. Well it turned out to be much easier to fix than I thought. I just brushed them with a bit of water and then wiped off the excess and it worked fine. I had thought of doing that before but was thinking that the moisture would just melt the sugar but it actually worked perfectly. I had also tried hitting them with a torch, warming them in the oven, putting them in a hot oven and steaming them for a couple of seconds but none of those worked. I have recooked batches before but the results weren't as good after being cooked twice and it was a major pain to try to get it all to melt before burning and it took a long long time.
