  2. Any suggestions for asparagus in the CSO? Other than steam for 10 to 12 minutes from the CSO instruction book. (Unfortunately I don't have a program to open the spreadsheet to see if there is something for asparagus.)

    I agree with @minas6907, the plastic one looks like it would have limited use. A funnel should work for your caramels and things that are too hot or fluid to pipe. It won't work as well for a thicker ganache because you're relying on gravity and flow rate instead of squeezing it through the piping bag.

It's 1.6 cubic feet, but seems larger inside than the Kenmore it replaced. And it does have an inverter, 1200W, and a simple numeric keypad. My only slight irritation is that you have to hit "cook time" to enter a time directly -- but it has shortcuts for 1-6 minutes and +0:30, so I don't actually need to do that very often. I ended up getting it on sale at JCPenney (of all places!) for $145 shipped. They do have a 1.5 cu ft convection model, but I didn't consider that as my Breville already sits on top of the microwave

    Hi I am wondering if it will dispense caramel - i usually take the caramel to 245-245F and pour into silicone molds from the All-clad pot it is made in - this is very heavy to do 1 handed and I am just looking for an alternative. the molds have 24 cavities each and a batch fills 2 molds and I always end up with a little trail between cavities - just trying to work faster and cleaner. same for filling bonbons - not a big fan of piping - maybe i just need to do more to get better and improve my technique - I just love my gadgets though!! I think i don't really need this - I pour piping hot caramel into molds like 250F hot - thanks for your advice - i think i should just keep doing what I am doing and deal with it - it's not like i am doing huge batches - getting ready to make a batch of stout caramels

    Heres my honest opinion, and I apologize if I sound a bit harsh, but I just have a thing against Fat Daddios. Is this the funnel your looking at? https://www.amazon.com/Fat-Daddios-Confectionary-Funnel-Nozzle/dp/B007OXRK4K/ref=sr_1_fkmrnull_1?keywords=confectionery+funnel+fat+daddios&qid=1555718739&s=gateway&sr=8-1-fkmrnull They show a picture of the funnel being used to deposit chocolate into a polycarbonate mold, but think about the clean up, its very time consuming, a disposable piping bag is much more effective for that task, or even a ladel. I've seen plenty of pictures online of cheap confectionery funnels being used to dispense chocolate, but I just don't see how that's practical. A confectionery funnel is extremely useful for depositing hot liquids or gels that one would be unable to pipe out from a bag (especially into a small cavity), such as caramel, gummies, jellies, fondants. Those are all candies that you cant load up a piping bag with and pipe out in a timely manner, they are just too hot, some are too viscus, and others would set up right in the bag because one wouldnt be able to go fast enough. May I ask, when you say that you want to portion caramel, are you boiling up a caramel, then using the funnel to deposit the hot caramel into a mold? Or are you having in mind doing something like preparing a caramel, cooling it, then filling the funnel with the room temp caramel mixture, and depositing the caramel filling into a polycarbonate mold? I ask because it almost sounds like you want a confectionery funnel to use instead of a piping bag. In all frankness, if you get the funnel for depositing tempered chocolate into a mold, it just wont work as well as you may imagine it would. However, if your getting it for depositing boiled caramels, thats different. But it its the latter, I would still not recommend the Fat Daddios funnel. Its made from polycarbonate plastic, which would form cracks over time because of the very hot liquid being poured into it, and I would be inclined to say that the little nozzle that screws onto the bottom would be garbage. I use it with a decent around of frequency, enough to sometimes consider getting another one.     Moving to a new place very soon so my Easter menu will be the same as most other days for the past couple weeks... whatever I find in the freezer that I can eat so I don't have to move it or throw it out.

    About the Mary Washington asparagus seed from Baker Creek Heirloom Seed Company: The recommendation was to soak the seeds for 24 hours. Many seeds have germinated in less than one day. About the sugar beet seed from Baker Creek Heirloom Seed Company: I very recently received a letter from them. "We regret to inform you that the lot of seed you purchased tested positive for GMO contamination." The cost of the seeds was $3.00 for ~250 seeds....there were actually many more. They did issue me a $5.00 gift card....but that's not much of a consolation considering the amount of time and effort invested (I sowed the seeds one at a time.) The seedlings are now about an inch tall.

    Giancarlos's or Anthony and Son's? Got a friend who is Irish and Polish; wife is Jewish. We compared info today and he said latkes today(brisket on Good Friday didn't seem like a good idea); brisket tomorrow and lamb on Sunday... I am a UU and husband does not celebrate Easter so right now it stands at my "free" Kosher chicken then goodness knows what else if/when he gets home Sunday.

    For years I have seen this sign for pierogies at this little hole in the wall deli. I decided to stop on Monday....OOOPS. Closed. Stopped yesterday on my quest for food for John and his friend. Scored a dozen frozen potato and onion pierogies. Dinner tonight was 4 of them cooked up and served with some applesauce and sour cream. These are possibly the best I have ever had...except for my friend Rich's.

    went to visit a friend yesterday. She asked if I wanted some split pea soup - H E double hockey sticks!!! YES. I adore split pea soup; I love split pea soup. NO one in my current familia likes ham so NO HAM BONE!!!!! I had a bowl with some toasted (Shoprite) yellow American cheese and tomato. I even shared it with a friend of John's who was visiting for a concert and had NEVER had split pea soup!! He allowed as it was tasty(he is originally from North Carolina).

    We don't normally have sandwiches for dinner but the new edition of Cuisine@Home came out this week and this jumped out at me, so that was dinner tonight. The recipe was called Korean Barbeque Steak Sandwiches. The steak was a rib-eye grilled (on a Breville indoor grill in my case), sliced thinly, mixed with a sauce consisting of ketchup, rice vinegar, light brown sugar, soy sauce, gochujang, garlic and sesame oil. Buns are toasted, I used brioche, shredded napa cabbage is put on the bottom of each bun, sauced meat on top. The cucumber salad, called Korean Cucumbers, had a dressing of rice vinegar, gochuganu, soy sauce, sugar and sesame oil. Sliced scallions were added as were some toasted sesame seeds. Looking forward to having them again.

    Has anyone seen the new kitchen sprayer technology by Delta called ShieldSpray? Here's a link to their website (click). You don't lose the regular spray function or streaming function of a faucet...it's just a new function in addition to the others. Here's a video showing it in use: So it it a good thing? Or just a gimmick? I like the lack of spray splatter (but, really, no one sprays a plate and make a mess like that unless they've never done dishes before ).

    Yesterday at Shoprite I was told their delivery was coming in last night. I woke up in withdrawal and hurried to Shoprite before work. No limes. I'm sure this is because of International Scurvy Awareness Day on 5/2. Scurvy is a dreadful way to die. Meanwhile I just placed an order with Amazon for ten limes, with delivery for tonight.

    I tried the Semi-dried Antipasto Vegetables and thought they were fantastic. Had them as a side dish room temp. The texture of the veg was not mushy, but toothsome and had lots of flavor. The oil is subdued and not too much. Product of Turkey, I know they sun dry a lot of veg in Turkey, so I wonder if these are sundried or? I bought the antipasto cherry tomatoes and the grilled artichokes but have yet to open them.

  26. Man... talk about first world problems. Sorry but I find the notion of "really caring about your customers" being reflected in the type of lock used on the bathroom stalls/doors a bit over-the-top. But carry on... I'm actually kinda interested in seeing where this goes.

Canneles were discussed in another thread seems a D/C for TJ's right now called yest and they saved me two there were 12 in the freezer section , so I bought 4 get them while you can. these are to die for : they come in different shapes at different times of the year. you will eat the whole packages so plan accordingly don't know what the next ' season ' is might be halloween * sigh *

    @eugenep Thanks for your kind words. I use a Canadian bread flour. It is from Rogers Flours and it is one of their commercial products. Protein is 13.4%. Even their regular bread flour available in grocery stores has 13.4 %. protein. I have tried a number of "pizza dough" recipes and also the 00 Caputo flour. And I haven't found a recipe or a flour that I like better than what I use. If I know that I am going to use a batch of dough for pizzas than I will usually increase the hydration. The batch above was 76% hydration and started with a yeast biga The higher hydration makes it easier to stretch with a couple of rests .
