Oh, add the Perfect Brownie pan if you know where to buy one. I've tried: Michael's, HomeSense, Home Outfitters, Sears. I'd like two for moulds for toffee. I know Target has them in the USA.
We don't intend to buy all the above...we just want to know where to buy them and neither of us knows Toronto.

Confectionery partner, Barbara, and I are off to Toronto fairly soon and want to know where to buy confectionery supplies: chocolate couverture, Mycryo, chocolate moulds & stencils, hard candy moulds, caramel rulers, aluminum baking pans, in essence all things you can't buy in a small city like Peterborough (or as we call it, Peterpatch
)

Can someone point me in the correct direction for a freeze-dried fruit powder? Thanks. Anywhere in Ontario would do fine for mail-order...or Canada for that matter.

Two well-known suppliers of freeze-dried fruits are Terra Spice Company and Just Tomatoes. Neither one is in Canada, though. I've had some luck with taking freeze-dried strawberries from Metro and buzzing them through my coffee grinder, so if you can find whole freeze-dried raspberries, it might be worth a shot...Thought I would start here. Chef Eddy van Damme has a recipe for raspberry-flavored chocolate couverture using freeze-dried raspberry powder. I can't seem to find such a product in Qzina or online for McCall's...doesn't mean they don't have it.
