Blondies

Serves 24 as Dessert.

This recipe was adapted from the July/August Cooks Illustrated. It's incredibly easy. Make sure you find the best available white chocolate. Also, you can add a cup of nuts if you'd like. Our family is nutty enough, so we went nut-free with this recipe.

  • 1-1/2 c All purpose flour
  • 1 tsp Baking powder
  • 1/2 tsp Salt
  • 12 T Unsalted butter, melted & cooled
  • 1-1/2 c Light brown sugar, packed
  • 2 Eggs, large
  • 4 tsp Vanilla
  • 6 oz White chocolate (or mix of white & semi-sweet) -- chopped

1. Preheat oven to 350F. Line 13" by 9" baking pan with a sheet of foil. Spray with non-stick spray.

2. Combine flour, baking powder, salt in bowl and set aside.

3. Stir together melted butter and brown sugar. Add eggs and vanilla and stir until well-mixed.

4. Fold dry ingredients into wet until just mixed. Add chocolate, and turn into pan.

5. Bake about 22-26 minutes until top is shiny and golden brown. Do NOT overbake. Allow to cool fully (something that I learned from Ellen Shapiro -- my knuckles still ache). Cut into 24 squares.
