Hi Chef Hawksworth,
What is your favorite way to prepare salmon, as well as sauce (if you recommend one) to accompany it? Also, which salmon do you prefer? (ie. Alaska Copper River King?) Thanks!

Right now it's gotta be Salmon Ballotine, I'm using a spring salmon, later I'll post the recipe and try and scan a photo......
