Chef Hawksworth, welcome.

So, they call the place where Vancouver is "British Columbia." You've worked with some of the foremost practicioners of so-called "Modern British Cuisine." Is this a coincidence, or are there deeper connections between BC cuisine and UK cuisine, or is it all just French food at the higher levels anyway?
