Hi

I will be in Italy in a few weeks - Roma and Naples.

I am an avid bread baker and I was hoping to find a place in either of these two cities which would have the following items.

One is a stamp to make rosetta rolls, also called michetta or sometimes bigne I think. They are nowhere to be found in the US.

The other item is a pandoro mold, the real authentic ones are only made in Italy with tall sides. The ones in the US are not true pandoro molds and are pretty much portugese manufactured star shaped bread molds.

If someone can steer me toward a place that may have these items - I would be very grateful. If there is a website to preuse before my trip - even better! If its in Italian, that is not a problem!

I have forwarded you request to a Baker in Rome. Hopefully he will let me know soon.

I know an artisan in Naples that produces metal tools for patisseries but I am not sure he does rosetta o pandoro stamps.

My rosetta stamps is in plastic and was sent to me by a friend in Sicily.

Thanks for the reply and ANY help is greatly appreciated. It appears from your links that you are what I call a "dough-nut" as well. I hope your baking contacts can come to the rescue. I suspect in Italy it is not so hard to find these things and I would love to bring them home with me!

You would think that, with the number of bakers in the US, finding a rosetta stamp or real pandoro mold would not be impossible - huh? I have looked for years.

You should be able to find the pandoro thingy also known as a "recipiente angolare" at any "negozio di casalinghi" (housewares shop)

Although rosettas everywhere, no one makes em at home I bet! No luck. I even went to the back of a bakery and they said they could order one for me but it would have been to late. He told me to check the web but I have not come across one that ships overseas. Pandoro pans are more available at natale I hear from the locals.

If any brave soul finds a website that ships rosetta stamps to US, I would be very very grateful.

I fyou can wait until christmas we could have ethem shipped to my house (in Italy) and then have one of your fellow Philly men bring them back.

when you'll be in Rome, if you go to San Pietro, visit this shop: Peroni, in Piazza Dell'Unità, 29 (closed on saturday afternoon and on sunday)

there is everything you need (maybe the stampo per rosetta no...), it's dangerous because everytime i go there i want buy everything

When you are in Rome, go to a newspaper kiosk and ask for the Rome AZ (Azeta di Roma), the best rome's street guide, and if you need an internet point go to Easy Internet Cafe the cheapest in Rome (maybe now they'll ask for your ID card because the new antiterrorist law, but I'm not sure)

Via Barberini 2, just off Piazza Barberini. It is located downtown, on the main bus lines, within walking distance from Piazza di Spagna (Spanish Steps).

Andrewfenton is there now for the academic year and will be back in January for a visit. Perhaps I can get him to hook me up with a couple!

I know this is a very old post, but I was wondering if you had a recipe for pane rosetta. I was fortunate to receive a stamp as a gift from a friend traveling in Germany, so now I'm searching for a recipe. I'd like to make the Roman style, crispy and airy.
