Shaun, your "signature dishes" cover a wide spectrum of raw materials : Scallops with Lentil and Coriander Sauce, Steamed and Crisp Fried Duck, Sweetbreads with Potato and Olive Cakes to name a few, but do you have a particular favourite ingredient amongst those you use regularly that you like to work with best?

Cooks love fish. Even those who never eat the stuff. I suppose it responds to the chef's craft more readily.
In fact I love fish and regularly eat a four or five course meal of different fish dishes if I have my family to stay. I do think that you cook best what you enjoy eating most so fish must be my answer.
