Fergus, you eschew them completely both on the menu and on the plate. Do you have some visceral dislike of them or is it more a marketing style to enable St. John to stand out as different to all other restaurants (which it certainly does)?

Good food has an intrinsic beauty, so...why garnish?

Marketing doesn't come in to it.
