It looks like a very nice menu that does not require special equipment. I am tempted to try some of the recipes.

if you can get outstandingly fresh salmon Id go there and take a taste.

Panna cotta recipe? Hmmm... Does that mean there is Modernist Cuisine Just Desserts in our future? I am pre-ordering.
