Living in a city has its limitations in being able to see a whole plant grow. Usually we only see the part that is brought to market and considered edible.

I now realize that sometimes a plant's flavor permeates into its other parts, (although sometimes poisonous too, )it is a place to experiment with caution. When I noticed a salsify root sprouting like an endive or a ginger plant and its fragrant leaves that perhaps can be used like an herb, it made me wonder about other possibilities we never get to see.
