En Estilo Tierra Caliente

Here in Houston I've encountered numerous taquerias, taco trucks, panaderias, etc., with Tierra Caliente in the name or the phrase 'en estilo Tierra Caliente' referring to the cuisine offered but what does this mean in terms of preparations, sauces, ingredients?

I know what the geographic reference is
, I'm asking about the significance of the term with regard to the food.
