First Trip to Israel

We will be in Israel in late March-early April and will have free time in Jerusalem and Tel Aviv. We'd appreciate suggestions on restaurants in both cities which feature fresh ingredients and local specialties at a moderate price, preferably not touristy. Thanks!

Before responding - do the restaurants have to be kosher?
