One night in Santiago, where do I go for dinner for the best seafood in town.

have anyone eaten at Astride Gaston or Cuero de vaca

I've eaten in both. Astrid y Gaston is one of my favorite restaurants in town. Cuero Vaca not so much. There's better places to eat meat.

And I know it's probably a bit late. But in case it isn't, I opened my restaurant about 4 months ago (shameless self promotion) and we're really proud of the food we make here. It's called Fabula. Best food in town!

i wasnt very happy with Astrid , latin america cuisine is not what i really wanted or cared for see my review at www.gagit.net , I would have loved to try your restaurant .

Too bad you didn't enjoy tour Astrid y Gaston Experience. I haven't been there in a while, but flavors were more vibrant than what you described. Hopefully it will be better in Miami. It's too bad I didn't read your post before. I would have recommended a few places to go. Another good chilean restaurant is set to open doors in Miami sometime next year: Puerto Fuy. Also, there was a wine expo friday the 24th and saturday the 25th. Great place to try the new 2007 Sauvignon Blancs and others. I went there and really, really enjoyed it. Plus, the guest of honor was beer, with many brand new micro-breweries that are shaking things up.

Hopefully next time you -or anybody else- comes over, we can sit down and talk about food a bit (my favorite subject!)

My Wife and I are going to be in Santiago for 3 days this January. Any suggestions? I've only read a little about:

Puerto Fuy

Astrid y Gaston is not the same in santiago as Peru, it was the biggest food dissapointment on my trip
